2021-2022 SCHOOL YEAR

Plant Based Meals Internship
FOOD & NUTRITION DEPARTMENT

Job Goal: Somerville Public Schools Food and Nutrition Department is seeking a part time, temporary Nutrition Intern to develop a plant based protein recipe toolkit and oversee our Grow Rack Initiative.

The internship is an opportunity combining nutrition and technical expertise.

•Nutrition Skills: Familiarity with recipe/nutrient analysis programs
•Technical and Functional Expertise: Proficient in Word, PowerPoint, Excel, Outlook
•Project Management: Ability to meet deadlines and handle multiple tasks
•Communication Skills: Proficiency in writing and editing
•Thinking Skills: Ability to think creatively
•Interpersonal Skills: Capability to adapt to and work in a team
Responsibilities:
Using The Lunchbox’s “More Plants Please!” as a guide, work with Somerville staff to complete the following tasks:
•Develop and implement a short survey about the need for plant based meals.
•Review city and district goals and plans for addressing climate change and sustainability
•Research other districts who have implemented plant based protein menus and recipes and write two case studies about their activities.
•Using products available to Somerville Public Schools through our school food vendors, identify or develop 5 or more plant based recipes to consider for inclusion on the school lunch menu.
•Record recipes in a nutrition information system, including allergens, nutritional information, meal pattern components.
•Develop a monthly menu template that identifies plant based meal days or regular alternatives.
•Final project - Create a Plant Based Protein Recipe Toolkit for staff to use while developing monthly school food menus and a communication plan to increase awareness of initiatives in the food service department.
•Research other districts who have used Grow Racks and write two case studies about their activities.
•Create a production plan that includes a seeding, maintenance, and harvesting calendar.
•Take the lead on planting and caring for produce in Grow Racks in collaboration with the Citizen Food class at Next Wave/Full Circle.
•Keep careful production records.
•Develop a template that identifies how the Grow Rack produce can be used in recipes.
•Final project - Create a Grow Rack Toolkit for staff to use.

Terms of Employment:
•6 Months (2021-2022 school year)
•180 work hours
•$2,500 stipend
