DATE: February 8, 2019

TITLE: Lead Cook- including breakfast duties, 5 hours per day

FUNCTION: Under the supervision of School Nutrition Director bakes, cooks and
prepares a variety of food in quantity for both breakfast and lunch; exercises
supervision over all employees working in the cafeteria.

LOCATION: DiPietro Elementary School

1. Plan and coordinate work flow for kitchen.
2. Ultimately responsible for the preparation of all food to be served in the school breakfast and lunch program, including work delegated to other cafeteria workers.
3. Ensures work is done on time and in a manner that ensures food quality and safety guidelines are met.
4. Maintain a safe, clean and sanitary kitchen and cafeteria including, but not limited to: counters, walls, food production surfaces, floors, sinks, ovens, food production equipment, and food storage areas.
5. Accurate record keeping, including, but not limited to: Production records, inventory sheets, daily income sheets, HACCP documentation and cleaning schedules.
6. Orders dairy goods as needed.
7. Transfer large batches of food from stock pots, kettles, ovens and roasting pans to appropriately sized serving and storage containers.
8. Perform all other duties as may be assigned by the School Nutrition Director or the Superintendent of Schools.
9. Adheres to the adopted polices of the Bellingham School Committee.

1. 3-5 years of Quantity Food Production experience in an institutional cafeteria or school district.
2. The ability to read, understand and follow written and/or verbal instructions in English, including but not limited to: standardized recipes, production records, inventories, order guides and cleaning schedules.
3. The ability to input dollar amounts and extends daily cash sheets, also, the ability to input values and extends production records, inventories, order guides, cleaning schedules and other records assigned, but not mentioned above.
4. Ability to perform all essential duties.
5. Ability to supervise and manage others.
6. Ability to lift 50 pounds without assistance and to work on feet for duration of shift.
7. Verifiable local references.
8. Knowledge of sanitary methods, standards, safety and HACCP precautions applicable to kitchens and equipment.
9. Must be able and willing to go through and pass the Food Safety Certification Course, as regulated by State and Federal guidelines.
10. Must be able to use basic computer skills and POS software.
